Why does it matter?
When using the dehydrator function (as opposed to the ‘B’ for biltong function) on your KK unit the most important factor is how uniform each piece of meat (or any other food item) is.
The chamber has been engineered to create a consistent drying environment from top to bottom. There is no need to rotate shelves or turn them around mid session.
That means that the differences between each piece of meat are what can make or break the final product.
If one piece is cut thicker on one side and another piece is consistent but thinner than all the rest, you will notice the difference in the final result.
And if you know exactly what you’re looking for then having some pieces end up completely different from your expectation is frustrating.
Bone dry, tough, crunchy or still wet in the middle. Or even both.

Consistent cuts every time
A butcher will tell you; if you need to cut meat into thin strips like when you’re making biltong smalls in your KK12, pop it in the freezer for 30-60 minutes first.
By putting it in the freezer the meat will firm up and make it much easier to cut.
And that’s a great tip.
But even with this hack cutting meat to the exact same thickness is always going to be a chore.
Especially when you have 12 trays (or more with the KK16) to fill with each mm variance making a huge difference to the outcome!
By cut five, the knife is a little duller, your attention has shifted to the next step and your hand is a little less steady.
You are starting to rush the process.
You aren’t really paying attention but the cabinet will.
Thickness drift is not a skill problem
There is a name for what builds across a hand-cut batch. Thickness drift. It is not about technique. A sharp knife still dulls halfway through three kilos of silverside, and your hand still tires after twenty minutes of repetitive cutting. You cannot concentrate your way out of it.
This is why experienced makers still get the occasional patchy batch and cannot work out why.

A prep checklist that works with or without a slicer (Save this one.)
- Chill the meat for an hour or two before cutting. Cold meat holds its shape and cuts cleaner.
- Cut against the grain for tender jerky or biltong smalls. Unlike biltong which is recommended to be cut with the grain.
- If you are hand-cutting, keep it sharp throughout the job, not just after every batch.
- Consistency matters more than any specific thickness. Pick a thickness and hold it across the whole batch.
- You can find your ideal thickness over time only if you are hitting a consistent thickness every time.
- Prep all your meat before you start spicing. Do not spice as you go.
